廈門炒米 Xiamen Fried Rice Noodles

廈門炒米,係一味香港嘅炒米粉,唔少茶餐廳、大牌檔同酒樓有得賣。雖然個名叫「廈門」,但係廈門冇呢隻米粉,道理同星洲炒米一樣。
廈門炒米冇固定煮法,但個味都會整酸酸甜甜。傳統上廈門炒米嘅酸甜味會用到五柳菜,但亦有人會用酸子薑或者酸蕎頭取代,甚至齋落茄醬就算數。其他配料就同星洲炒米似,譬如會落蝦、叉燒、雞蛋、火腿絲,芽菜。
Xiamen fried rice is Hong Kong's fried rice noodles. It is sold in many cha chaan teng, big stalls and Chinese restaurants. Although the name is "Xiamen", there is no such rice noodles in Xiamen. The reason is the same as fried rice in Singapore.
There is no fixed cooking method for Xiamen fried rice, but the taste will be sweet and sour. Traditionally, the sweet and sour taste of Xiamen fried rice is made with five willow vegetables, but some people will replace it with sour ginger or sour buckwheat, or even just add tomato sauce. Other ingredients are similar to Singapore fried rice, such as shrimp, barbecued pork, eggs, ham strips, sprouts.

1.
洋蔥蕃茄叉燒切絲,米粉浸熟,新鮮蝦灼熟剝殼
2.
燒熱鍋,下油炒雞蛋,下米粉炒干
3.
下蝦,蕃茄絲,洋蔥絲,銀芽,五柳菜,叉燒絲。
加入調料糖醋汁,茄汁,鹽,糖。炒均,試味。炒幾下完成
烹飪解說
如果要切絲最好用瘦叉燒切絲
如果進求健康的話,五柳菜可以不用下,因為醃菜都有防腐劑

cooking method
1.
Shred onions, tomatoes, barbecued pork, soak in rice noodles, and cook and peel fresh shrimps.
2.
Heat a pan, add oil and fry eggs, add rice noodles and stir-fry dry
3.
Add shrimp, shredded tomatoes, shredded onions, Sprouts, five willow vegetables, and shredded barbecued pork.
Add seasonings sweet and sour sauce, tomato juice, salt and sugar. Stir well and taste test. Stir fry for a few times and it’s done
Cooking commentary
If you want to shred it, it’s best to use lean barbecued pork and shred it.
If you are looking for health, you don’t need to eat pickled vegetables because they contain preservatives.
